Text Box: Chocolate Brownie Mug Mix

1/4 cup granulated sugar
3 tablespoons flour
2 tablespoons semi-sweet chocolate
     chips
1 tablespoon unsweetened cocoa
1 tablespoon finely chopped pecans
     (optional)
1-1/2 teaspoons egg white powder 
1/4 teaspoon vanilla powder (optional)
1/8 teaspoon baking powder
Dash of salt

Blend ingredients together and place in a small
zipper-type bag if using at a later date or giving as a gift.

To prepare: Microwave 1-1/2 tablespoons butter or margarine in mug until melted (20 seconds on high power). Empty brownie mix into mug and add 2 tablespoons water; stirring with a fork until blended. Microwave on 60% power for 2 minutes. Let stand in microwave 2 minutes. Remove from oven and let stand until cool enough to eat.

2 tablespoons granulated sugar
2 tablespoons flour
1 tablespoon instant nonfat dry milk
1/8 teaspoon baking powder
1/8 teaspoon cinnamon
Dash of salt

Blend all ingredients and place in a
small plastic bag if using at a later 
date or giving as a gift.

Additional ingredients:
1 (4 oz.) snack size container of diced peaches

To prepare: Microwave 1 tablespoon butter or margarine in mug until melted (about 20 seconds on high power). Add cobbler mix and 2 tablespoons water. Stir with a fork until well blended. Add well-drained peaches on top of batter. Do not stir. Microwave for 2 minutes on 70% power. Let stand in microwave 2 minutes. Remove from oven and let stand until cool enough to eat.

To prepare the mixes, use a microwave safe mug that will hold at least 12 ounces (or 1-1/2 cups) of liquid. Accurate measuring is important—all amounts listed are for level measurements.

These recipes were tested in a 1000 Watt microwave oven. Since microwave wattages vary, you might need to make slight adjustments in cooking times and power settings for your oven. Don’t overcook your cakes or they will be tough and dry. A bit of moisture on top after baking is normal.  

The dessert mixes that require the addition of eggs are made using egg white powder. Egg white powder (a well-known brand is called Just Whites®) is found in most large supermarkets on the baking aisle. You can also use meringue powder found in the cake decorating section of most discount stores and craft stores.

Some of the mix recipes call for vanilla powder, but this ingredient is optional. When preparing the dessert, you can substitute vanilla extract for the vanilla powder if you like, or simply omit it from the recipe. Vanilla powder is measured exactly the same as vanilla extract and adds extra flavor to the dry mixes. Some large grocery stores and gourmet stores also carry vanilla powder. Another option for adding vanilla flavor to the mixes is to substitute vanilla sugar for the granulated sugar called for in each recipe. A recipe for Vanilla Sugar is below.

Unique “Thank You” Gifts

Need a fun gift for a friend or co-worker? Place a bag of Chai Tea Latte Mix in a mug that is lined with colorful tissue paper. Attach a bow to the handle. Write the cooking instructions on a card and attach to the handle or tuck inside the mug. Add a sign that says, “Thanks a Latte!”. Print it on cardstock, cut it out and tape to a straw or wooden skewer and place inside the mug.
  		      
 	      Chai Tea Latte Mix from
    Easy Microwave Desserts in a Mug® 

1/4 cup granulated sugar
2 tablespoons instant nonfat dry
     milk
2 tablespoons powdered coffee 
     creamer
2 tablespoons powdered French 
     Vanilla coffee creamer
2 tablespoons unsweetened instant tea
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/16 teaspoon ground cloves

Place all ingredients in a blender or food processor and process until mixture is a fine powder. Place in a small zipper-type bag. Recipe makes 4 servings. To prepare: Microwave 1 cup of water on high power for 1 to 1-1/2 minutes or until hot. Stir in 3 tablespoons of mix.

Blend together 1 cup of granulated sugar with 1/2 teaspoon of vanilla extract. Stir until thoroughly blended. Spread out in a shallow pan and let dry for 2-3 hours. Stir again to break up any lumps and store in an airtight container. Substitute for the same amount of granulated sugar listed in each of the desserts in a mug recipes that call for vanilla powder. Use the same recipe for brown sugar, but you don’t need to let it dry. Just store in an airtight container.
